Pasture-Raised Pork

We offer pork shares – whole, half and quarter shares – of our pasture-raised, Old Spot hogs. All our animals are fed locally grown, non-GMO feed and are rotationally grazed. They live their lives in the sunshine with grass underfoot. We believe in caring for our animals to the absolute best of our ability, knowing that they will, in turn, care for us through all the nutritious meat and wonderful by-products they produce.

Some helpful definitions…

Live weight: the weight of the pig live, on the hoof. Our hogs are typically around 300 pounds at processing.

Hanging (or Dressed) Weight: the weight of the animal minus the blood, head, hide, feet, entrails and organs. Hanging weight is usually about 70% of the live weight. The hanging weight of a typical hog from our farm will be 200-225 lbs.

Take Home Weight: the weight of the meat you will have to fill your freezer. With our hogs, this is usually about 70% of the hanging weight, or approximately 140-150 lbs. Much of the loss of weight from “hanging” to “take home” is from cutting the meat off the bones. More boneless cuts means less packaged weight, so sometimes less weight doesn’t mean less meat, it means fewer bones.

Pork by the Cut

While it’s not possible to switch out individual cuts within the shares, you are more than welcome to add any available USDA pastured pork cuts to your order. While it is more economical per pound to buy a pork share, we understand that occasionally convenience is the priority. All pork by the cut is USDA inspected. Please contact us (see form below) to get a full list of available cuts.

We base our pork by the cut pricing on the USDA National Pasture Raised Pork Report.
